Yakhni Pulao

This is my favourite recipe, the thing that i love most about it is that it is quick, easy and free from any artificial flavours
Serves 2
Rice                                1 cup, washed and soaked for 1 hour
Chicken                         250 gms boneless
Garlic paste                  1 tbsp
Green chilli paste        2 tbsp
Cumin Seeds                1/4 tsp
Cardamom green        1
Clove                              1
Black pepper corn      2
Onion                            1 medium
Oil                                  1-2 tbsp
Heat oil in a pan
Add onion and fry until transparent
Add cumin seeds, cardamom, clove and black pepper corn and stir fry for a minute
Add garlic paste and cook for another minute
Add chicken and fry until it is white
Add 4 cups water and green chilli paste
Cover and cook 30-35 minutes and then turn off the stove. You will be left with a cup of chicken stock.
Strain out chicken and cardamom
And give the remaining ingredients a stir in the blender until smooth

Add chicken and chicken stock in a pan and another cup of water

Your liquids combined should measure up to 2 cups
Bring the mix to a boil
And add rice, cover and cook until rice are 3/4 done
Seal tight with a cloth, lower heat and cook until rice are fully done.
Serve with fresh salad and mint raita.
