Savoury Crepes

Makes 7-8 rolls

For Crepes:
12 tbsp flour
3 eggs
1 tsp salt
1 tsp black pepper
2 tbsp oil
1 cup water

Method:
Mix all ingredients together, make sure there are no lumps
Heat 1/2 tsp oil in a 10 inch frying pan
Add 1/2 cup batter
Rotate pan until the batter is evenly divided
Flip side when you can see bubbles forming
Each side will be done in 15-20 seconds
Take the crepe out.

Put filling in
Roll up like a spring roll and seal with the left over mixture
Shallow fry before serving

For Filling:

you can choose any filling as per your liking, my favourite fillings are Chicken mushroom or spring vegetable filling.

For Chicken and Mushroom Filling:
Chicken mince: 250 gms
Mushroom: 1/2 cup
Cheddar & Mozzarella cheese: 1 cup
Salt and pepper to taste
Oil: 1 tbsp

Heat oil in a pan and add the chicken mince and cook until all the juices run out and chicken is done
Add the mushrooms and seasoning and cook for 2 minutes
Turn of the flame and add the cheese, Your filling is ready.

For Spring vegetable filling:
Carrot: 2 Julian cut, or chopped
Spring onions: 1 finely chopped
Capsicum: 1 Julian cut, or chopped
Cabbage: 2 Cups finely sliced
Chicken: 1 cup boiled
Eggs: 2 Boiled and chopped
Salt and Pepper: As needed

You can add or omit ingredients as per your liking, just stir fry all of them together for 2-3 minutes and season with salt and pepper
